Piri Piri Portugese kipmarinade. De lekkerste Piri Piri marinade maak je natuurlijk gewoon zelf. Piri Piri is Swahili voor rode peper, en komt oorspronkelijk uit Amerika, waar het door Portugese Zeevaarders via Afrika naar Portugal werd gehaald. Dit recept is origineel uit Zuid Portugal, één van mijn favoriete vakantie landen.
- 4 teentjes knoflook
- 2 rode pepers
- 1 citroen
- 1 theelepel gemberpoeder
- 1 eetlepel laurierpoeder
- 1 eetlepel verse oregano
- 3 eetlepels olijfolie
- 1 eetlepel paprikapoeder
- 1 shotglas portwijn
- 1 shotglas whiskey
- 1 theelepel zeezout
Snijd de knoflook, rode pepers en oregano fijn in snippertjes. (Piri Piri moet pittig zijn, dus laat gerust de peper zaadjes zitten). Voeg de rest van de ingrediënten toe en roer het geheel goed door elkaar. Laat het geheel een uurtje rusten zodat de smaken goed op elkaar in werken. De Piri Piri marinade is nu gereed om de kip mee te marineren voor op de BBQ. Smeer tijdens het grillen op de BBQ de kip regelmatig opnieuw in met de marinade.

The dish originates in Moçambique (previously a portuguese colony), taken later all over Portugal.
Definitely not originally from the south of Portugal, the Algarve.
Port wine? Whisky? Never in a million years. It was taken over from the local populations who certainly couldn’t afford to use anything like port or whisky. Which will simply burn in the barbecue leaving a nasty taste on the meat.
By red peppers I hope you mean what in Italy are called “peperoncini”, small, 3 to 5 cm dried hot piripiri. Make it 5 per chicken. Add some butter too.
Mix the lot (minus the idiotic alcohol) rub it into the chicken, let it rest a few hours.
Keep basting while it cooks on a good hot barbecue. Not on one of the silly covered things currently invading the market.
Serve with French fries and a fresh salad.
Cold beer or white wine (portuguese vinho verde) will complete your happiness.
You might ask how do I know this? Grew up in Moçambique, ate goodness knows how many of these spendid meals. The hotter the weather the more piripiri is appreciated
